Carolina Kick-It BBQ Rub packs sweet, smoky heat in every shake. Makes about 1 cup—enough for 8–10 pounds of meat. Sprinkle 1–2 tablespoons per pound on pork, chicken, or beef, rest 30 minutes, then grill or smoke. Simple, bold, crowd-pleasing flavor.
Ingredients
- 2 Tbsp kosher salt (use 1 Tbsp for wings or other small cuts)
- 2 Tbsp white sugar
- 2 Tbsp packed brown sugar
- 2 Tbsp ground cumin
- 2 Tbsp chili powder
- 2 Tbsp freshly ground black pepper
- 1 Tbsp cayenne pepper
- 2 Tbsp sweet paprika
- 2 Tbsp smoked paprika
- 1 tsp dry mustard powder
Instructions
Combine all spices in a bowl. Break up any sugar lumps with a spoon.
Store in a tight jar, out of sunlight. Flavor stays bright for about three months.
Rub 1–2 Tbsp per pound of meat. Press it on every side.
Rest the meat 30 minutes at room temp, or chill it overnight for a deeper kick.
Cook as you like—grill, smoke, roast.
Salt tweak: Drop the salt to 1 Tbsp when seasoning wings, chops, or other thin cuts. This keeps them tasty without being salty. Enjoy the heat!
